Egg Muffins Twist

Ingredients & Measurements (Makes 12):

  • 2 tortillas
  • 9 – 10 eggs
  • Moco black sauce(hot/medium/mild)
  • 1 small bell pepper, diced
  • Handful of spinach, chopped
  • ¼ cup crumbled feta (optional)
  • Shredded aged yellow cheddar

 

Instructions:

  1. Preheat oven to 350F and line muffin tin with cupcake liners
  2. Cut tortilla into 1-inch strips, roll them upward, and place one strip into each muffin cavity
  3. Prep bell pepper and spinach and set aside
  4. Whisk Moco black sauce and eggs in a bowl
  5. Add diced bell pepper and spinach around each tortillaroll up
  6. Pour egg mixture about ¾ to the top
  7. Top with feta/shredded aged yellow cheddar and bake for 15-20min
  8. Eggs should feel spongy and firm to touch
  9. Enjoy them plain or top with Moco and diced scallions
